ila apple of my eyeEnjoy the autumn harvest with a twist of apple and chilled ila. Add a clove too if that’s your thing.

INGREDIENTS
ila
ice
apple (your favourite variety)

METHOD
First chill your chosen glass by filling 2/3 with ice.
Cut a couple of wedges from the apple and a shaving for garnish.
Pour away half the ice and any melted ice water from your glass. Add the apple wedges.
Gently pour your ila onto the inner side of the glass.
Gently twist the apple shaving back and forth over the glass a couple of times and drop in.

Serve with fresh shellfish or a pear and almond tart.
