the key ila

Sometimes, simple is best. When served well, few drinks can beat an ila with an extra hint of fresh green citrus.

INGREDIENTS
ila
ice
lime
mint (optional)

METHOD
First chill your chosen glass by filling 2/3 with ice.
Roll a lime and cut a couple of wedges and a slice or shaving for garnish.
Pour away half the ice and any melted ice water from your glass. Squeeze one of the lime wedges over the ice.
Gently pour your ila onto the inner side of the glass.
Add the remaining lime wedge, a rubbed leaf of fresh mint if desired and garnish with your slice or shaving of lime peel.

Enjoy just on its own, or pair with a sour & spicy thai dish.
