the ila sunrise

No tequila (or oranges) in this sunrise, just inspiration from some travels in S.E. Asia. An intriguing combination of east & west.

INGREDIENTS
ila
ice
lemongrass
mint (vietnamese if you can get it, otherwise spearmint works fine)

METHOD
Chill your chosen glass by filling 2/3 with ice.
Slice off the very bottom of the lemongrass stalk, peel off any dried-out layers, then bash the woody top end with a rolling pin to soften.
Pour away half the ice and any melted ice water from your glass.
Add a couple of rubbed mint leaves and the bruised lemongrass stalk. Stir briefly using the lemongrass stalk.
Gently pour your ila onto the inner side of the glass.

If you have any thai basil, or even better, cinnamon basil, then a small leaf mixed with the mint leaves adds another dimension.

Try with a Goan curry, Tom Kha soup  or even some coconut brittle.
